If you have kids or a job or honestly, if you just breathe air…you probably know what it’s like to wake up and be instantly running. No matter how organized I try to be, mornings are always chaos. I wake up hungry, busy, and already behind.
Enter: My breakfast burritos. These bad boys are absolute game changers.
It’s basically just an egg mixture with chicken sausage and a bunch of veggies. I cook everything in one big pan (so easy), then roll it all up into tortillas.
Once they’re rolled, I wrap them up and store them (some in the fridge, some in the freezer) and boom, I’ve got breakfast ready for a week and a half.
In the morning, I just toast, air fry, or crips them on a skillet. Honestly, the skillet is the best way to do it if I have the energy. It takes barely any time, and I’m eating a delicious, protein-packed burrito without having to think.
If you’re looking for good tortillas, I have to share this. My friend Betsy got me hooked on Tortilla Land tortillas when I was in Montana last year (I get mine at Costco!).
Before these, I didn’t really care about tortillas. But now? These are next-level. I’ll swear by them forever. They’ve got that authentic flavor and texture that just makes everything better. I cook them right on my gas stovetop or flat-top skillet. Just a quick heat-up and you’re good to go. Life-changing. Truly.
Veggie hack: My veggie chopper is a total game changer! Throw all your veggies in, and it chops everything perfectly consistent. It saves so much time and makes prep a breeze.
Make it sweet: Drizzle a little pure maple syrup over your burrito before you roll it if you like a sweet-and-savory combo and it’s unexpectedly amazing.
Turn up the heat: Add your favorite hot sauce, salsa, or jalapeños to the filling if you like it spicy.
Kid-friendly twist: Skip the spicy stuff and cut them in half for perfect little mini burritos. Great for lunchboxes or after-school snacks.
Camping favorite: Wrap them in foil and toss on the campfire grill. They reheat perfectly in minutes!
