If you’re looking for an easy after-school snack, something to keep stocked in the fridge for the kids, or the perfect dish to bring to a football party, this bean dip is the recipe for you! It’s one of our absolute favorites and something we make all summer long.
It’s fresh, crunchy, a little sweet, a little tangy, packed with flavor, and SO easy to throw together. We keep ours in the fridge and it lasts for about four days… although I promise you it probably won’t last that long because it’s that good.
Pro tip: It tastes even better the next day. So make it the night before you need it, let all those flavors hang out in the fridge overnight, and you’ll have the perfect snack or party appetizer ready to go. I also love using these Yeti serving bowls because they have multiple sizes and they all have their own lid! It’s perfect for storing in the fridge or taking it to a party.
I actually made this one with my sous chef for the day, Boone Brent, and he took his job very seriously. He’s seven and absolutely obsessed with this dip, which I think says a LOT.

Serve with:

1. Make the dressing
Start by heating the rice vinegar and olive oil on the stovetop. Once it’s hot, add your sugar and stir until it dissolves. This usually only takes a minute or two.
Once the sugar is dissolved, remove it from the heat and let it cool to room temperature. This is the little sauce/dressing that really brings the whole dip together. It’s sweet, tangy and so good!


2. Chop your veggies
While your vinegar and oil mixture is heating up, you can get everything else ready.
Dice your red bell peppers and chop your green onions, then add them to a large bowl. You can use whatever color peppers you have on hand, but I usually go with red.
3. Add your corn and beans
Rinse and drain your black beans and corn, then add them to the bowl (this is my favorite bowl to use) with your peppers and green onions. Give everything a good stir.


4. Pour in the dressing
Once your oil, vinegar and sugar mixture has cooled to room temperature, pour it over the bean mixture. Stir everything together really well so that the dressing gets all the way through the dip.
This is the part where you need some really big muscles because you want to get your spoon all the way down to the bottom and really mix everything together.
5. Add the feta
Finally, add your feta cheese and give everything one more good stir. If you’re adding jalapeño, mango or cilantro, this is the time to throw those in, too.


6. Refrigerate overnight
Cover your bean dip and pop it in the fridge overnight.
I know, I know… you’re going to want to eat it immediately. But trust me on this one! It tastes even better the next day once all those flavors have had time to come together.
It will keep in the fridge for about four days, assuming it lasts that long!
7. Serve!
When you’re ready to serve, give everything a good stir and grab a bag of Tostitos.
That’s it! I love this for summer get-togethers, but honestly, it’s one of those recipes that works for just about anything. After-school snack? Yep. Football party? Absolutely. Having friends over? Put this out with some chips and watch it disappear.


You can make a big batch, keep it in the fridge for several days, and have something ready to go whenever everyone starts getting hungry. And because it actually gets better after sitting overnight, it’s the perfect make-ahead recipe.
Our whole family loves it, and Boone is proof that you don’t have to be an adult to appreciate a really good bean dip. His official taste-test verdict? “It’s so good.”
This is one of those recipes I always bring whenever we get together with other people in the summer, and I can pretty much guarantee you’re going to come home with an empty bowl.
