I don’t know about you, but when the weather warms up, I crave all the fresh, juicy flavors and this summer I cannot stop making (and eating!) this super simple watermelon salad. I know it’s basically fall now that I am justttt now getting to this but honestly, this is chefs kiss for any time of the year when you need a sweet little treat. It’s sweet, salty, refreshing, and comes together in just a few minutes.
Here’s how to make it:
And that’s it…seriously! The juicy watermelon, creamy feta, and tangy balsamic are the perfect balance of sweet, salty, and slightly bitter, and the fresh herbs take it over the top.
It’s light, refreshing, and honestly kind of addictive. Great for barbecues, pool days, or just a quick snack when you want something fresh and flavorful. Pair it with a crisp glass of white wine—because balance, right?…and you’ve got the perfect snack situation.
