I’m just going to say it: these salmon sushi bowls are so good.
They’ve got everything you love about sushi, fresh flavor, that perfect balance of sweet and spicy, and somehow, they taste shockingly close to your favorite sushi spot.
Best of all? No fuss. Just simple ingredients that come together in the best way.
These are a staple in our house. My kids love building their own bowls, and honestly, it turns dinner into something way more fun.
And yes… there’s a little secret to making them next-level.
It’s the sauce.
Creamy, spicy sriracha mayo that ties everything together…trust me, you don’t want to skimp on it.
So, if you’re ready for a healthy, flavor-packed dinner your whole family will love, here’s exactly how to make them.

1. Marinate the Salmon: First, in a shallow dish, whisk together the soy sauce, rice wine vinegar, sesame oil, garlic, ginger, and honey.
Then, add the salmon and turn to coat. Cover and refrigerate for 20–30 minutes while you prep everything else.
Why this matters: this step gives the salmon that rich, sushi-style flavor.


2. Make the Sushi Rice
Add the rice, water, and salt to a rice cooker or pot and cook according to package directions.Once the rice is finished cooking, fluff it with a fork. Then stir in the rice wine vinegar and sugar until everything is well combined.
This is what gives the rice that classic sushi flavor, slightly tangy and a little sweet.
3. Make the Sriracha Mayo
While the rice is cooking, in a small bowl, whisk together the mayonnaise, sriracha, rice wine vinegar, soy sauce, and honey until smooth.
Taste and adjust as needed. For example, add more sriracha for heat or more honey for sweetness.


4. Broil the Salmon
Next, preheat your broiler to high and move your oven rack to the upper third.
Place the salmon on a foil-lined baking sheet and broil for 8–10 minutes, until cooked through and slightly caramelized on top.


5. Build Your Bowls
Now for the fun part.
Start with a scoop of warm rice. Then, top with salmon and layer on avocado, cucumber, nori, scallions, and sesame seeds.
Finally, finish with a generous drizzle of sriracha mayo.
Pro tip: don’t skip the sauce! It’s what makes these bowls truly next level.
