I’m just going to say it: these Wild Game Big Mac Tacos are dangerously good.
I actually made these with elk from my New Mexico hunt this year, which somehow made them even better. There’s just something about cooking with meat you harvested yourself that hits differently.
They’ve got everything you love about a classic burger, savory meat, melty cheese, and crunchy toppings, but wrapped in a crispy tortilla that somehow makes the whole thing even better.
These are on repeat in our house. In fact, they make the weekly rotation, sometimes multiple times a week. My kids love building their own, and because of that, dinner instantly becomes more fun and way less of a struggle.
And honestly, there’s one thing that makes these completely next-level.
It’s the sauce.
Creamy, tangy, a little sweet and it pulls everything together. You can skip extra toppings if needed, however, do not skip the sauce. Trust me on this one.
If you’re looking for an easy weeknight dinner that’s family-friendly, customizable, and packed with flavor, I filmed the full step-by-step so you can follow along:

Special Burger Sauce
1. Start with the Onions
First, add your onions to a pan or griddle and cook them down until they’re soft and caramelized. This step is important because it builds deep, rich flavor right from the start.
Once they’re done, set most aside. However, leave a small amount on the pan for your first taco.


2. Prep the Tortilla and Meat
Next, take your tortilla and spread a thin, even layer of ground meat directly onto it. Then, use a fork or your hands to press it down evenly before seasoning with salt and pepper.
3. Cook the Tacos
Now, place the tortilla meat-side down onto a hot pan, directly over the onions. The meat absorbs even more flavor while it cooks.
Let it cook for a few minutes until browned and slightly crispy, then flip.


4. Add Cheese and Melt
After flipping, top with sliced cheese and cover with a lid. This helps the cheese melt perfectly and evenly.


5. Build Your Tacos
Finally, it’s time to build.
Add a generous drizzle of your homemade burger sauce, then layer on shredded lettuce, pickles, onions, and any other toppings your family loves.
If you’re cooking for a group, use a griddle or flattop like a Traeger or Blackstone. Not only does this make the process faster, but it also allows you to cook multiple tacos at once.
On the other hand, if you’re cooking for one or two people, a regular pan works just fine.



You’ve got crispy edges, juicy meat, melty cheese, and fresh crunch from the toppings. Meanwhile, the sauce ties everything together in the best way.
My favorite part…these are incredibly family-friendly. Because everyone gets to build their own, dinner feels more interactive, and even picky eaters are happy.
