If you’ve been riding the sourdough train like I have, you know the discard starts piling up fast. I’ve been playing around with all kinds of ways to use it, and these sourdough waffles? Total win. They’re golden, crisp and they’re secretly packed with protein, so they actually keep you full (a major morning win). Bonus: my kiddos are just obsessed with these as I am. So if you’ve got some discard hanging out in the fridge, it’s waffle time!
My favorite toppings are plain Greek yogurt, fresh berries, and maple syrup! Some other fan favorites are chocolate chips or your favorite nut butter.
These are also the perfect thing to make ahead for a quick and easy breakfast (which is a mom win)! To reheat from the fridge just throw them in the toaster for the ultimate reheating experience.

Ultimately, these protein waffles (or pancakes) have become a weekend staple in our house…especially when Leni’s in charge. If you make them, I want to see! Snap a pic, tag me (@evashockey), and let me know if you’re team pancake or waffle!
