I have been RUNNING on carbs for this entire pregnancy… my eyes can’t even see meat without feeling queasy which is KILLING me because if you know me, you know I live a field-to-table life and usually love lean protein and veggies. Since meat and veggies are both off the menu (for the time being), my new Eva Shockey MTN OPS line has been a LIFE SAVER!!! I have been making these healthy (and filling) protein pancakes, because I need allllll the protein I can get! These are a huge hit with Tim and Leni Bow as well, which always makes my heart happy knowing my family is getting tons of goodness snuck into delicious recipes like this.
My new Eva Shockey line includes three products that I use religiously every single day. Super Greens, Collagen and Egg-white Protein Powder. Right now they’re available to buy as a pre-launch combo here, and will eventually be available individually. The protein powder I use for this recipe is seriously the BOMB! It’s egg-white protein, meaning there’s no dairy or gluten in it, so if you’re lactose-intolerant or gluten-free, this is the protein powder for you! It tastes DELICIOUS (it’s vanilla flavor so it goes with everything) and delivers 20 grams of fat and cholesterol-free protein, including all 9 of the essential amino acids for you to be your best self. I spent a looooong time formulating this with the MTN OPS team to help solve problems for busy people just like me!! Here’s my go-to recipe for Protein Pancakes!

Tons of women ask me if these are safe for pregnancy and nursing, and my answer is this: I worked together with MTN OPS to develop products that would solve a problem for busy mamas like me and something I could feel comfortable taking while I was pregnant and beyond. So I got the entire line of ES MTN OPS supplements cleared by my doctor (I literally brought the supplement bags with me to read off ingredients!!) before ever starting to use these products. However, always check with your own care team, first to be sure! All of these products are definitely a go-to for me whether I’m pregnant, nursing, or just looking to amp up my green and protein intake. Between this recipe and my favorite Protein Iced Coffee and Super Mama Green Smoothie, I’m ready to conquer the day as a busy mama and businesswoman.
I can’t wait to share more recipes, adventures, and more with you SOON!! What kind of recipes do you want to see? I’m going to start creating some new ones but I need some suggestions! Smoothies? Breakfasts? Kid’s snacks? Comment below to let me know!

Do you have a recipe book with what you eat on a daily basis to stay thin along with what workouts work for you. I’ve tried this recipe! Mine don’t look like yours! It’s more like a egg white pancake and rubbery… any tips?!
